Högberga winery on Lidingö is testing blueberries instead of grapes this year.

It may wear or break.

But the fermentation takes longer;

up to four to five times longer.

- It would of course have been much easier to work with ordinary grapes.

Because I can, says Johan Zälle, sommelier and winemaker at Högberga. 

But there are also benefits.

Blueberries lack the substance histamine, which is found in the skin of grapes and causes migraines in seven percent of the population, says Johan Zälle.
