SUMMER RECIPES - Every day, our culinary journalist Marion Sauveur offers a simple, tasty and easy to make recipe. This Thursday, she offers a sandwich with Munster, this cheese from Eastern France with a powerful taste.

Munster is a cheese with character, with a powerful fragrance and a sweeter taste than it seems. Today, it is made in seven departments around the Vosges. It is a soft cheese, a little chalky and with a rind, yellow-orange in color. It is matured in the cellar for at least 21 days, a period which allows it to develop its nutty and floral flavors. Our culinary journalist Marion Sauveur offers us to cook it in bread. 

Ingredients

  • 1 munster
  • 2 onions
  • 200 g of bacon
  • 25 cl of fresh cream

The steps of the recipe 

1. We are going to make a Munster cream. We start by sautéing a few onions in a pan with smoked bacon. When the bacon and onions are nicely browned, add the munster which is melted very slowly, it should not be rushed. And when it is melted, we incorporate the crème fraîche. 

2. All that remains is to toast a large slice of country bread.

3. Cover it with this gourmet mixture and serve with a salad of raw zucchini, marinated in olive oil and lemon, with crushed hazelnuts. 

This is a perfect recipe for those who are afraid of Munster because of its smell. Melted, it is much softer than on a cheese board and there, when you bite into this toast, you will succumb to its smoothness.

Go to the Vosges! It's not really an address, since it's a food-truck and it moves every day. It is called "Ô kam du terroir". Behind the stove, Guillaume Delgado showcases the products of his region in wraps made with natural sourdough and flour from the Rehaupal mill. And I advise you to taste "the little pig" with its Munster sauce, grilled bacon and raw carrots and zucchini.

Ingredients

  • ½ munster
  • 20 cl of dry white wine
  • 50 g of white roux
  • 30 cl of cream
  • Pancake

The steps of the recipe

1. Melt the munster.

2.  Add the white wine.

3. Link with roux. And incorporate the cream.

4. It remains to garnish a pancake with this preparation.
