Special diets can be anything from allergies like lactose and gluten to religious foods. Therefore, with this increase, the industry association Diet & Nutrition has, with this increase, made new recommendations for how to work with the special diet in school kitchens.

- There will be more and more costs that you are not used to. It is difficult to judge whether it is a special diet for medical reasons or is this a customized meal that we should make based on the Discrimination Act or how it is we should relate to it, says Åsa Kullberg, Diet & Nutrition.

Among other things, there are recommendations for how to work with the special diet for lactose intolerant, which is a very common special diet.

- Most people who are lactose intolerant can eat a certain amount of lactose and then we have set a lower limit on what is available for food based on these limits. We suggest that anyone who is lactose intolerant can eat the usual food that is served in the school restaurant if it is less than two grams of lactose and then when it exceeds one can prepare a special diet, says Åsa Kullberg.
