Marc Veyrat, the head of the House of Wood in Manigod (Haute-Savoie), who lost in January one of his three Michelin stars, announced Wednesday withdraw from the guide, which he blames "a deep incompetence."

In a letter revealed by the Point, addressed to the red guide who had withdrawn in January his third star, a year after having attributed to him, Mr. Veyrat, 69, famous for his black hat and his use in cooking botanical plants , wrote: "I have been in depression for six months, how dare you take the health of your cooks hostage?"

The chef, who had gone to the guide's headquarters in Boulogne-Billancourt to understand the reasons for his demotion, denounced "the deep incompetence" prevailing in the most famous gastronomic guide.

Confirming to AFP the news of his withdrawal, Mr. Veyrat reported that "they + + have dared to say that we put cheddar (cheese English, ed) in our soufflé reblochon, beaufort and Tomme! insulted the region, my employees were crazy! "
