This biscuit which, as its name suggests, has the shape of a cat's tongue, dates from the 17th century. This is one of the many variations of these pancakes that appeared in the Middle Ages under the name of "bis-cuit": preparations made from flour, sugar (sometimes salt) and eggs that are cooked twice (hence the name bis-cuit) and which were taken on board by sailors. Dry and hard, they had to be soaked in liquid to soften them. They are descended from "dipyres", pancakes prepared in Greece during Antiquity.

Over the centuries, the biscuit gentrified and gained its letters of nobility.

We decline it, flavor it and introduce butter.

In 1653, François de la Varenne, a great pastry chef, introduced the “ribbon” technique, which consists of vigorously mixing the sugar and the eggs.

It was at the beginning of the 19th century that the industrialization of biscuits appeared.

The recipe for cat's tongues

Ingredients :

- 4 egg whites


- 100 g of soft butter


- 100 g of flour


- 100 g of sugar


Mix the butter and the sugar / add the flour then the egg whites / with a pastry bag make small sticks on a sheet of parchment paper / bake 7' in an oven at 200 degrees.
