And only two Two-stars, and fifty-four One-stars distinguished by the Guide Michelin 2021. This is less than the other years, but not so bad in view of the forced closure of most restaurants in France. during seven of the last twelve months.

A singular prize list for a vintage which is no less so.

"With the reinforcement of their international colleagues, the inspectors were able to carry out as many meals this year as in previous years", confided in the preamble the boss of the Michelin Guide, Gwendal Poullennec, to justify the relevance of its 2021 edition.

On the two-star side: Hélène Darroze for her Landes specialty restaurant Marsan in Paris and Cédric Deckert, young chef at La Merise in Lambach in Alsace, were rewarded.

Fifty-four restaurants which reach the rank of stars is the number of the day.

For most of their cooks, “it's a childhood dream”, as Mory Sacko, the chef of MoSuke in Paris, one of the rare chef present and also winner of the young chef of the year award.

That of the young chef returned for her part to Coline Faulquier who also won her first star for her Signature restaurant in Marseille.

Finally, there are 33 new “green stars”, the distinction created last year in favor of restaurants committed to a sustainable gastronomic approach.
