Born and raised in Coslada, in the middle of a job change and with no intention of opening anything of his own, life made a free store in his neighborhood cross his path... and things took a 360º turn. "He was cool to me and I didn't even think about what he wanted to do." He wanted to get out of his culinary comfort zone, offer a different proposal with "Thai, Chinese snacks, with something from Peru... I mix things from here and there" and, most importantly,

make his food available to everyone. job

. "I wanted to give people who usually don't have access to it the opportunity to try a different cuisine."

He did it with his savings, without any fund or investor behind him, and he has been on the job for four and a half years. "

In this time we have created nearly 3,000 dishes

." And in each of them he has tried to contribute something new. "We have evolved a lot since we started," he says next to the bar. "We started with a chicken Milanese and now we bring out a rice with lobster." This has increased prices somewhat and he knows that diners don't always understand this. "I know where I am and how far I can climb them."

Direct and without mincing words, he bluntly says that in his house "the customer is almost never right." He argues the idea: "You come to my house and I receive you. We have rules and we must respect them. You cannot come to eat at four and think that we have to receive you." He considers that for too long "the hospitality sector has been mistreated: people thought that we were here to serve them, period. And that's not the case.

Patricia, who left her office job to accompany her brother on his adventure, watches him a few meters away. "We have always been very close and I have greatly admired her way of cooking and her abilities," she says, somewhat excited.
