It is the bar of a lifetime, with marble bar, beers and vermouth on tap and tapas and dishes of the day to suit the client. This tribute to the traditional tavern that the Barbillón group inaugurated just over a year ago is open from 9 a.m. to 2 a.m. 365 days a year. It also boasts the best views of the capital from its terrace: the Palacio de Cibeles on one side, the Puerta de Alcalá and the Retiro, on the other. Toast with ham, churros and a mixed sandwich for breakfast; Bravas, salad, torreznos or a montado of squid to eat and varied portions of zamburiñas, octopus or scrambled eggs and entrecôte for dinner are compelling reasons to stop by this place.

For more than 130 years, this emblematic place of the Glorieta de Bilbao has been a meeting point for Madrid's social life. It was one of the first stores in the capital to introduce the non-stop business model in 2001. Today, it is one of the places of reference in the Salamanca district that has managed to adapt to all kinds of schedules throughout the day, from breakfasts to business lunches or the liveliest dinners. It is ideal to enjoy both an outdoor brunch on its terrace, a snack in the bar area and high tables or a dinner in the main dining room. Its extensive menu presents avant-garde dishes and elaborations that are inspired by other cultures, such as those that are part of its theme nights. It currently has "American Wednesdays", as a tribute to American cuisine. It has an extensive menu that includes its mini burgers to the French or the Italian, and some of its classics, such as the bread bao of duck pad thai, tacos or ceviches.

This seductive restaurant divided into two floors transports the diner to India as soon as they cross the door with its aromas, its colors and its menus. It offers genuine Indian cuisine, in which tandoori chicken, curry butter chicken or the appreciated lamb gold, tandoori baked lamb that is presented covered in 24-carat gold sheets, are some of its star dishes. The menu is made up of traditional recipes from the north of the country, where chef Sukhwinder Singh is from: they are more elaborate, more seasoned, with a greater presence of meat than fish and with denser sauces. Of course, the lamb comes from Segovia and with halal seal and the free-range chicken, prawns and fish (salmon and hake), from small trusted suppliers. The spices have a main role and are prepared by the chef after selecting, roasting and grinding different varieties in grain (cloves, cinnamon, black cardamom, bay leaf, anise, cumin, turmeric, coriander, etc., most of them imported). Finally, you can have drinks and cocktails on the ground floor, where there is an area of armchairs and marble bar, or on the terrace at street level. On weekends, diners can enjoy dance shows and DJ sessions.

MOEMIA

It is the latest and most recent project of brothers Sergio and Roberto Hernández, fathers of Latasia, the local groundbreaker that fuses Spanish, Peruvian and Singaporean cuisine. This tavern, decorated with illustrations by the artist Tato Repetto, proposes from Madrid recipes that marked the childhood of both brothers, but with their personal stamp, like the usual bravas, which here are crispy waffles, to dishes of Asian influences (from all the countries where they have been and worked) and Peruvian. In addition to the bravas waffles, highlights include its version of empanadillas (stuffed with chicken pepper), tripe a la madrileña with Thai red curry, Korean torrezno, with a glaze with Asian-inspired barbecue sauce, caramelized sweetbreads with wok and meatballs (the only dish on the menu totally traditional, with its ratatouille and fried egg). Its offer of wines from small producers and craft beers stands out.

Original local and original concept of this pizzeria in Chueca that moves away from the traditional with its signature pizzas made with fresh doughs made daily and a mixture of groundbreaking ingredients. With an industrial and diaphanous appearance, the restaurant houses a large table, where diners mix, and a wood-fired oven where pizzas such as Pistachio (the Best Pizza in Spain of 2002), Truffled Burrata or Mr. Salsiccia (with spicy honey), among other traditional ones.

TREZE

Traditional gastronomy with an innovative point is what chef Saúl Sanz presents with his creative proposals, such as duck rossekhat, roasted pigeon stewed with trophie pasta or wild boar medallions with onions. Among its essentials are torreznos, veal sweetbreads on pig's trotters and red curry or sautéed squid on bucatini pasta and yellow curry. Game dishes also stand out on the menu.

Spanish market cuisine with many traditional references and a few fusion is what you can taste in this bar restaurant with terrace located next to the Embajadores roundabout opened six years ago by José Miguel Valdivieso and Rita García Fuster. The search for the good product is the basic premise and in the menu there are signature dishes and also of the grandmother "with avant-garde". Among its most outstanding dishes are the shoulder of IGP Cordero Segureño roasted to the aroma of the Sagra, the paella of the senyoret, the risotto of boletus with lamb juice, raisins and Grana Padano, the roasted eggplant with teriyaki sauce and smoked anchovy, the grilled sweet potato with chocolate sauce and curry, the beef tenderloin tartare or, even the croquettes of carabinero and squid. Do not miss the desserts, which mix sweet and salty, such as the deconstruction of lemon pie with lime ice cream, lemon gel, lemon thyme mousse and dry meringue.

In its menu there is a wide variety of appetizers and dishes to combine to taste, from tapas and pintxos, such as the foie basket with free-range yolk and truffle sauce, the octopus skewer with bacon or its iconic glazed rib minitaco, to main dishes such as duck magret accompanied by port pears and sweet potato chips, the squid stuffed in its ink with jasmine rice or the rib burger glazed at low temperature with sautéed red cabbage.
