Picones de María is one of the great food houses in Madrid. His formula: to have found the balance between raw material and service. Opened in 2018 next to the Plaza de Castilla, its good work soon translated into a long waiting list that made it one of the most desired dining rooms in the city.

And if there is a dish on their menu – which is always nourished by seasonal products – that has given them their name that is the stew – it is not the only one, far from it – that they offer every Thursday. "On Monday, when we are closed, we start making the wines," explains Jesús Peinado, who is in charge of running the room and explaining in detail each of the dishes that come out of the kitchen. In this one María Meño takes the reins.

The Picones de María stew normally has three passes, but on Thursday they premiere a special edition with the Iberian product of Señorío de Montanera and have expanded them to five (28 euros without drink or dessert). The soup opens the party, followed by chickpeas, vegetables from the garden of Aranjuez (pumpkin, carrot, potato ...) and Chinese cabbage, which replaces cabbage. Then comes the chorizo, blood sausage, bacon, bacon and balls. The fourth pass is starred by pig's trotters, the ear and the nose and, the last, the blood sausage, cheeks, chicken and ribs. There is no shortage of green chillies and natural fried tomato.

Those who do not manage to reserve a table in Picones de María these five Thursdays, do not despair. Señorío de Montanera, leading firm in pure Iberian of the D.O.P. Dehesa de Extremadura, has created a pack (19.90 euros, without sarta chorizo) to make this stew at home with 100% Iberian acorn-fed products. It is designed for 4-6 people and contains Iberian bacon, Iberian black pudding, ham bone, Iberian pork tail, Iberian pig's ear, Iberian pork backbone, Iberian pork rib and Iberian sarcass chorizo (optional and with a supplement of 5 euros).

The rest of the menu, where tradition and technique go hand in hand, contains other jewels such as Russian salad, jerky croquettes, Manchego asadillo and Lesaka omelette, in honor of the one made by Josefina Sagardía in Kasino. Market kitchen of great height. This tandem does not need a famous decorator behind or a designer tableware to make their work shine. Of course, this stew will only do so during the next five Thursdays.
