The Repsol Guide gala was held in this edition with views of the Mediterranean and with this background setting two new restaurants have won the category of honor with three suns: Maralba,
in
Almansa, and
Corral de la Morería
, in Madrid.
In this edition, 101 novelties are incorporated into the guide: with another 18 kitchens that obtain two soles and 81 that achieve the first.
Under the motto 'The kitchen fills us up', the Alicante Provincial Council Auditorium (ADDA) has hosted this party where the best national chefs have gathered, who once again have made it clear that the kitchens of our country are in full shape and full of talent.
María Ritter, director of the Repsol Guide, highlighted that "there is no better news than calling a restaurant and being told that we are full. It means that the kitchen fills us up in many ways."
This year the guide exalts Maralba and Corral de la Morería for their commitment "
to serene and emotional cuisine
, which delves into tradition and encourages the discovery of the most pleasant flavour".
Fran Martínez
, in charge of the former for two decades, has united La Mancha and the Mediterranean without complexes;
Mancha roots and fish from Levante shine on the table of this place, which has a three-month waiting list.
Since its inception, he has shared the project with his partner
Cristina Díaz
, Spain's best sommelier in 2022. "La Mancha cuisine is booming; it has always been recognized and appreciated by the people," the chef said hours before the gala.
The Basque chef
David García
has taken this world temple of flamenco to the top with a personal gastronomic vision where he intertwines its origins with the history of this tablao, probably the most famous in the world.
His winery, with more than 1,200 Marco de Jerez references treasured by
Juanma del Rey
, represents one of his great jewels.
Miguel Cobo, from Cobo Evolution.
Repsol's Chairman, Antonio Brufau, stated in his speech that "few things make us as happy in our culture as sharing a good meal. Spain is an internationally recognized gastronomic power with much potential yet to be discovered by the world."

"Gastronomy is a common good, which concentrates the culture, customs and knowledge of a territory, and which enriches the entire catalog of tourist products that the Valencian Community can offer to those who visit it", stated the president of the Generalitat Valenciana, Ximo Puig.
Among the 81 kitchens that make their debut in the guide with their first mention, there is an interesting representation of projects that have flown from the city to the countryside: Jorge Asenjo, who changed Donostia for a farmhouse in the Atxondo Valley (Bizkaia) to set up
Erro
, and Carlos Oyarbide, the fourth generation of a saga of cooks that Zalacaín took to the top, who has returned to San Adrián (Navarra) to open his own house,
