It is one of the most appreciated dishes there is.

The Russian salad accepts a thousand and one versions and can be found in large but also small restaurants.

At the San Sebastián Gastronomika Congress they have once again celebrated their championship and the winner has been

(Llanes, Asturias).

"grateful and happy for this recognition of a dish that we have had since we opened, and that is always there. We have a menu that varies a lot, we make it daily depending on the product that is available and the salad is never lacking," he explained the chef.

The challenge aims to highlight

the place that best prepares one of the star recipes of Spanish cuisine, a traditional recipe but open to new versions.

In addition, at the end of the meeting, the Asturian chef explained how they prepared 'the best Russian salad in Spain':

"

we prepare the potato baked instead of cooked

. no water and it is very dry and very toasted, increasing the flavor a lot. Then it is very mashed with mayonnaise, roasted piquillo peppers and manzanilla olives. What we achieve by integrating the mayonnaise with the warm potato is a very creamy result, almost like a puree. Then we plate it with tuna belly and add pickled piparra (which we make, fresh and spicy) and add chives and oil".

Noriega is thus proclaimed the 5th winner of this recognition, previously awarded in 2021 to Tragatá (Ronda, Málaga), in 2020 to Chinchín Puerto (Caleta de Vélez, Málaga), in 2019 to Candado Golf (Málaga) and in 2018 Tapas 24 ( Barcelona).
