Chef
Áxel Smyth
, responsible for the kitchen of the
Auga e Sal
restaurant , has announced through a publication on his Instagram account the closure of the
Auga e Sal
restaurant , owned by the son of
Alberto Ruiz-Gallardón
, which five months ago had received
its first Michelin star
.
"Today, that we should be finalizing the production and preparation to reopen the doors of the restaurant, unfortunately I find myself in the commitment to inform you that the owner of the restaurant officially communicated to us the
cessation of the activity due to the start of an ERE
and the closure of it. Disassociating myself from all the steps and decisions taken by the property from now on", wrote the Galician chef announcing the closure.
A few words in which the chef makes clear his rejection of the decision of the owner of
Auga e Sal
,
Alberto Ruiz-Gallardón
, as well as his disassociation from any management that the owner now takes.
"As you can imagine, it saddens me enormously to see how a project to which I have given all my effort and affection, closes its doors", continues
Áxel Smyth
's note in which he thanks the work carried out by the entire team, among which was the
head of room and sommelier from Vigo
Marta Costas
,
Best Newcomer Sommelier of Galicia in 2019
, these years, as well as the trust of the
Repsol Guide
and the
Michelin Guide
during all this time: "(...) Thank you for the trust you placed in this project and in me the two great gastronomic guides such as the
Repsol Guide
and the
Michelin Guide
, which awarded us 1 Repsol Sun and 1 Michelin Star respectively during these 2 years. Two of the most important days in my career".

Seasoned in the kitchens of
Casa Marcelo
and
As Garzas
,
Áxel Smyth
had been in charge of the
Auga e Sal kitchen for two years, during which time he received
his first Michelin star
on December 14
.
A moment that, as the chef indicates, was one of the most exciting of his career, but that was also very important for Alberto Ruiz-Gallardón who at that time confessed to
La Voz de Galicia
that opening
Auga e Sal
"had been a dream".
In fact, that of
Auga e Sal
was the only
Michelin star
that Galicia added and that now disappears with the closure of the restaurant located in the Galician capital.
"It saddens me enormously to see how a project to which I have given all my effort and affection closes its doors; I want to thank my team,
together we have achieved everything in such a short time
, you have made it possible from the first day to the last" ,
Smyth
pointed out
.

Auga e Sal
opened in 2016. In 2020, with the addition of
Áxel Smyth
, the restaurant sought a new boost, which it seemed to have achieved.
A year after its incorporation,
Auga e Sal
began to stand out, not only for obtaining
one of the 27 new Michelin Guide stars
, but also because the restaurant had also obtained
a Repsol Sun
in April .
Álex Smyth
, 31, has predicted "new projects" and does not rule out continuing his career in Galicia: "New projects will come and new goals will have to be overcome. Nonconformity as a way of life."
