A year ago chef Mario Vallés' restaurant opened at the Gran Melia Fénix Hotel and to celebrate the date they have filled the menu with novelties.

The space is a reference for its

exquisite mix between the classic and the contemporary

, the Spanish roots, the Latin touches and the nods of the Colombian chef to the French school.

The starters include the oyster with three dressings to choose from (apple and pepper, Dutch or ponzu) and the pâté en croûte, which is made stuffed with poultry, pork, choloma pigeon, meat consommé and port.

The pigeon and the red mullet win protagonists in the new season.

The first one shines in the giblet croquettes, the sirloin steak tartare with anchovies and the confit chocolate and pig's trotters, among other dishes.

The red mullet is enjoyed in a consommé of red mullet heads, an usuzukuri of the loin cured in salt, in a sticky rice and tempered in two sauces.

They also give the option of choosing the 'Suggestion of the day' that will change periodically and that will allow the diner to design their 'Midday Formula'

VILLA VERBENA

The terraces around the Casa de Campo lake have turned the area into a meeting point for foodies, athletes and the curious who have rediscovered this corner of the city.

The Villa Verbena terrace reopens its glass gazebo with a six-course menu (42 euros without drinks) where seasonal products take center stage.

At the moment it is operational

in April from Thursday to Saturday

and will be extended as temperatures rise.

The menu consists of Lebanese cauliflower with kale, yogurt and citrus;

grilled leek with pepper mole sauce;

seasonal vegetable stew;

puntalette with vegetables and seaweed;

Skrei cod with stalks and beef taco with cauliflower and mushrooms.

GIOIA

The most romantic and flirty Italian in Chueca is renewed with spring.

Chef Davide Bonato has created the menu

Otsukaresama tasting (from the Japanese "thank you for your great effort", 65 euros without drink

, where he tries to create bridges between Italian and Oriental cuisine.

Among the snacks he has created: from

fresh truffle with a Piedmont robiola cheese cream, warm 'spaghettino' with burrata, red prawn tartar, orange peel, basil and crustacean reduction, cubes of Mediterranean bluefin tuna marinated in soy sauce, ginger and balsamic vinegar from Modena and the Ebro delta oyster seasoned with Sicilian tomato seeds and a hot pepper, coriander and lime aguachile.

Always with nods to seasonal and national products.

ELENA HOUSE

Traditional cuisine based on seasonal and km0 products and a

wonderful terrace

-which reopens these days- where you can enjoy contact with nature.

The plan is located 40 minutes from Madrid, in Cabañas de la Sagra (Toledo), and in charge of the kitchen is chef César Martín, who has turned the place into a temple of Slow Food.

It has three tasting menus: seasonal (45 euros), classic (60 euros) and market (from Tuesday to Friday, 28 euros).

The herb churro from the garden with chocolate, the sea bass with rice and sherry vinegar, the wild asparagus with grapefruit and cheese, the veal, carrot and lemon gizzard and the Manchego cheese cake with quince ice cream are included in both first.

BLOOM

The liveliest plan of the week is cooked in the restaurant of the fashion and accessories firm Salvador Bachiller.

On Friday and Saturday nights (from 8:00 p.m. to 2:00 a.m.) the dinners at the venue with the most Instagrammable entrance in the capital will be enlivened with a show and live DJ music.

While enjoying some artichoke flowers or a carabinero carpaccio there will be many surprises.

The evening continues with the main ones, where you can't miss the sirloin tataki, burgers for all tastes, from Galician beef and prawns to wagyu with boletus, and the marinated salmon supreme on vegetable ties.

If the body asks for sweet, carrot cake is delicious.

Its cocktail menu, with more than 20 creations, is another of the local's strong points.
