"At 17, I had a bad time."

"I went to work in a kitchen and I didn't even know how to fry an egg."

At just 25 years old, he set out to open his first restaurant, which has already been awarded the valuable distinction by the French guide.

"The first year was very hard. I had no income."

Saba

(snacks, six passes, two desserts. With wines), for 65 euros;

Arrels

(snacks, eight passes, two desserts, petit fours. With wines), for 85 euros.

At the moment he has no intention of raising prices.

"I focus on trying to do it right every day. Being regular and honest is important."
