Who was going to tell the Italian brothers

Vittorio and Riccardo Figurato

that

December 2017

that the pizzeria they had just opened -in a small place in Madrid- would become the best in Spain and the third best in Europe in 2021, according to the ranking 50 Top Pizza, the digital guide of reference in the sector.

No one, not even themselves in their best dreams.

Already last year, Fratelli Figurato reached the tenth European position in this list, whose awards are "for the world of pizzas, like the

Michelin stars

", explains a smiling and expansive Vittorio.

According to the

European ranking of the 50 best pizzerias

, in this 2021 only the Parisian

Peppe Pizzeria

, of the pizza master Peppe Cutraro, elected

Best Pizzeria in Europe

, and

Via Toledo Enopizzeria

, of Francesco Calò, located in Vienna and number two of the the list.

Madrid's number 3 pizzeria in Europe.

"It is a very important classification. I think that being in it is a way of recognizing the artisan work that we are doing, as a team, and the love and

passion

that we put forth every day to make the

true Neapolitan pizza

known in Madrid

" Vittorio comments.

He continues: "It is a dream. We are very grateful and very proud."

Proud for a

triple game

, since the third European place is joined by the national award (

Best Pizzeria in Spain

, for the second consecutive year) and the special award for the best pizza of the year (Latteria Sorrentina Award):

Diavola de León

.

"We make it with some excellent

Leon chorizos

, and it is our way of thanking Spain for the possibility it has given us to open a restaurant and how it has welcomed us," Vittorio details.

Diavola de León, the best pizza in 2021, according to 50 Top Pizza.

It all started just over three years ago, when Vittorio and Riccardo, both Calabrian and from the world of

marketing

, decided to turn their

passion for food and cooking

into a profession

and bring the essence of Neapolitan pizzas to the capital.

Thus, they opened Fratelli Figurato, a

small pizzeria

in Alonso Cano, 37, and a year and a half later, Trattoria Popolare (Larra, 13), where

fresh pasta

made every day shares the limelight with light, unconventional pizzas that keep certain secrets . "First, we pay extreme attention to the dough. We use baking techniques, we take care of the measurements and

proportions of water and yeast

and also the temperature. This makes our dough very

digestive."

"Second, everything is done in a traditional way every day. Third, the

high-quality

ingredients,

" he continues.

Tenth in 2020;

third in 2021 and 2022, will they be first?

"We'll see, ha, ha, ha. It's just that we've been around for a very short time. We are really very new and there's still a lot to do.

For now, Vittorio is focused on

savoring this third place

.

The chefs of Sartoria Panatieri, number 11 and award for Innovation and Sustainability.

"Great pizzerias compete and, that we are among them, is incredible," he concludes. This year the classification by countries - there are representatives from

28

European

nations - is

led by

France and Spain

, with five establishments each. Thus, the national participation in this 50 Top Pizza is completed with Sartoria Panatieri (Barcelona), at number 11; in 29, La Balmesina, also in Barcelona; in 38, Oro di Napoli (Santa Cruz de Tenerife) and, closes the Spanish presence, Roostiq (Madrid), in 41.

In addition, this season the European edition arrives with an ecological novelty:

Green Oven

, an award that rewards innovation and

environmental

sustainability

of a pizzeria (respect for the environment, fight against waste, zero impact energy ...) .

In 2021, only

three places

have achieved this recognition, among them, the aforementioned

Sartoria Panatieri

, by chefs Rafa Panatieri and Jorge Sastre, who in their commitment to the

From Farm to Pizza format

make the sausages and cheeses for their pizzas themselves. .
