  • SUMMER. 11 places to enjoy fried fish with passion

Rubén Galán (38) loved his parents' work as a child: they were polleros. "My grandparents came from Zamora to work in Madrid." They settled in Barajas, because he was an aircraft mechanic. With 9 children, Galán's grandmother was an example of entrepreneurship, about which we talk so much now. "He took a farm in the area and started raising chickens." From there she went on to offer them roasted on request on Sundays. "The reception was" very good "and that pushed her to take another step.

They did not take long to take a place in the town and make it a way of life. "The whole family ended up in the business." Over time, Rubén's parents took over the reins of Casa Galván. "I then went for Biology", but three years ago, fed up with travel and stress, he decided to update everything he had learned at home

. "I wanted to remove the dander that normally surrounds a chicken rotisserie

and add a more modern touch." It already has four locations in Madrid.

All this history results in some tasty and juicy tall roast chickens. "We put lemon, red pepper and salt on them. And it also influences that the chickens are always fresh," explains Galván. In addition, they are one of the cheapest on the market.

On a Saturday they sell about 200 chickens; Sundays exceed 300

. They like them so much that they even ask for them for weddings. "The last one we had was in Avila with 150 people."

After the place in the town of Barajas, they took another in the Prosperidad neighborhood; then a transfer in Canillejas, which they inaugurated with the Filomena snowfall. "They all have the same philosophy and aesthetics," he says, with careful and modern packaging. The last space has been opened in Barajas as well. "We bet on a kitchen of use," says Rubén. "The latter is our workshop. The chickens that we do not sell we shred and make fingers, crests, cannelloni ..." Behind all this is the chef Sergio Guijarro ", who previously worked at Derzu Bar, a fusion restaurant located in Alameda of Osuna.

Chicken has long since ceased to be the ugly duckling on the menu.

"

It is the most ecological and economic protein that there is

", he assures.

For many it was Sunday lunch, a small feast whose smell permeated the whole house.

In summer, after a day at the pool or beach, it is one of the most desirable, fast and comfortable options.

Accompanied by potatoes, peppers or croquettes, it is always a well-received dish.
