Carlos Bosch's boutique bar has just opened near the Puerta de Alcalá with its neoclassical air -signed by Lázaro Rosa Violán- and a friendly, rich, varied and very well executed menu.

A year late due to the pandemic,

his gourmet tapas arrive in Madrid from Alicante

, where the businessman has made a name for himself with the restaurant El Portal (Alicante), Manero Alicante and El Singular.

"It is a boutique bar, the place where you can enjoy a gastronomy based on traditional Spanish tapas with a gourmet twist. Everything is paired with a great selection of wines by the glass and cocktails," explains Bosch himself, who wanted to move with aesthetics to

the bars of Europe in the early twentieth century

On the table,

the shrimp from Santa Pola, the Russian salad with belly and the croquettes

give a high welcome. All the products on the menu are supervised by Bosch himself, who is looking for small producers with whom to work hand in hand, where traceability, craftsmanship, sustainability and tradition are factors that count;

in the kitchen there is the hand of Sergio Sierra

. His famous squid sandwich in a crunchy Antequera muffin and the cannelloni, made with Carlos's mother's recipe, are some of the

hits

that have been brought from the Mediterranean.

There are dishes that have been incorporated into the Madrid menu, such as the bikini with fresh cheese, smoked salmon and caviar, inspired by the one that Rafa Zafra prepares in Estimar, and

the brioches - the lobster one is very popular

-, signed by the baker John Torres , which have become a claim in these first weeks of operation.

There is no shortage of raw dishes (oysters, tatakis ...) or salads - the tomato raf from Almería with its canned belly is delicious.

The torrija and the cheese flan are the sweet references of the house.

This obsession with the product and the demand of its customers, led Bosch to create its

own gourmet brand

, which it continues to expand. In addition to wines made in the best wineries in our country, they even have a Manero champagne - sparkling wines are one of Bosch's passions - which is made by the small Sanger winery in Avize. In fact, his restaurant El Portal is Krug's embassy in Spain and Manero is Dom Pérignon. The preserves are made in Galicia with the advice of the expert José Peña; They have their own oils and also nougat.
