Located in the Centro district, halfway (more or less) between Puerta del Sol and the Matadero area,

Lavapiés has become one of the most interesting gastro neighborhoods in Madrid

.

This area, once known for hosting a good handful of quite authentic and very inexpensive Indian dining rooms, has been filled with small restaurants and gastrotaverns with quite innovative culinary proposals.

The list is long, but here are some inescapable recommendations.

The Cannibal

Gastronomic space managed by Javier Vázquez (O'Pazo de Lugo) and sommelier Luis Vida.

Fleeing the limitations imposed by a traditional dining room, here we bet on small producers.

Its oenological commitment is almost endless, with almost 500 wine references, many of them natural, with special mention of those that come from Jerez and tap wines.

To eat, the ham omelette with chorizo and turnip greens is a safe choice.

Argumosa, 28.

Primadonna

The owners of the pizza al taglio

Fratelli d'Italia establishment

are responsible for this simple pizzeria located in one of the busiest streets in Lavapiés.

Bright space, with large windows, simple and informal, where you can try a score of pizzas, some classic and others more creative.

With uninterrupted hours, it has a pleasant urban terrace.

Argumosa, 18.

Lamb with Moroccan spice on sweet potato cream, in Tatema.

Tatema

Tatemar is an ancestral culinary technique, widely used in Mexico, which consists of cooking food over a fire almost until it burns.

Hence the name of this dining room, whose traveling menu has its watchword in grilled dishes.

But let no one expect to find a classic steakhouse here ... rather, quite the opposite.

Salad of roasted carrots with ganush slime and toasted squash, tatemada on the cob with popcorn powder and Parmesan, leek covered in yellow chili peppers with egg and chicken wings, braised lamb and Iberian sweet potato ... Good cocktail menu.

Argumosa, 11.

La Lorenza dining room.

The Lorenza

"A lady tavern of Lavapiés", as defined by its owners (the same ones who run

La Falda

, on Miguel Servet street, 4).

Xan Otero and Claudia Rodríguez took over the mythical San Lorenzo bar when it closed and built this charming tavern on its foundations, already converted into one of the most frequented addresses in the neighborhood.

Guilty?

The honeyed potato omelette with Galliña de Mos eggs, the octopus caldeirada gyozas (a vice) or the cannelloni of pig's trotters with oxtail, among others.

And an unexpected wine list.

Address:

Doctor Piga, 3.

Melo's

Three young entrepreneurs (Rafael Riqueni, Alejandro Martínez and Ignacio Revuelta) are responsible for the reopening of the mythical Melo's, the old bar that last October saddened many customers by announcing its closure.

The trio that is now in charge of the business has made sure that everything remains the same, including its culinary offer, with the mythical slippers (huge toasts of village bread with ham and nipple cheese) at the helm.

Address:

Ave María, 44.

Maribel Winery

A revival.

That is, after being forced to close her tavern for real estate reasons, Maribel has reopened in a new location.

Everything is new, but it tastes like the usual ... Their wine flats, their cider culines, the vermouths, the rations (chorizo a la cider, empanadillas, patatas bravas, cabrales ...).

Weekend appetizers are a party.

Ave María, 39.

Ham and mushroom flamenquín, in Maitetxe.

Photo: Javier de Amescua.

Maitetxe

Second home of the owners of

Tribuetxe

, the Basque-inspired bar (and Andalusian touches) that revolutionized Lavapiés.

The proposal is quite similar, portions to share, wines and bottles of La Salve.

You have to try the ham and mushroom flamenquín, the Sephardic aubergines, the tuna tartare, the smoked sardine loins, the cod omelette or the grilled entrails with its garnish.

Ave María, 17.

The Nobia.

The Nobia

Local born under the protection of

Juan Raro

(Miguel Servet, 7), informal and cosmopolitan, with an irreverent, international and Madrid cuisine menu.

How is that?

Well, with dishes like the coconut croquettes and roasted sweet potato, the potato omelette with pickled mussels, the crunchy ear with parmentier and brava sauce, the Thai-style squid with trinxat or the low-loin ssam with chipotle mayonnaise.

The wines have been selected by La Fisna.

Address:

Salitre, 45.

The Fisna.

The Fisna

Located in the old Casa Donato, Delia Baeza runs this small winery, heir to the eponymous wine shop that was located on Doctor Fourquet street.

In its menu, there are about 300 references (fifty per glass) between champagnes, French and Italian labels, bottles of Marco de Jerez ... The culinary offer changes according to the season: Russian salad with piparras, tomato salad, tuna onions with fragrant smell , beef meatballs ...

Address:

Amparo, 91.

Baked camembert with roasted garlic, in Los Chuchis.

The Chuchis

A must for all those who think that British cuisine is not worth it.

Scott Preston runs the kitchen of this little blue-colored restaurant where it's a must to try the crispy potato skins with sour cream or the baked camembert with roasted garlic (pictured).

On weekends there is slow roasted pork.

Address:

Amparo, 82.

Hope Bar

Almost on the border with the Las Letras neighborhood, very close to the Doré Cinema, it is a bar with a traditional air and seventies details open for anything: an aperitif, a lunch, a snack, an afternoon with gin-tónics ... Whatever.

The culinary proposal includes recipes of all kinds, from a trotter carpaccio with prawns to a Russian salad with octopus and olives, through smoked tongue coca, a pastrami sandwich or black cuttlefish fideua.

Address:

Torrecilla del Leal, 3.

Pachuco House.

Pachuco House

José María Lobelos is the chef in charge of this house with a small dining room, where fusion cuisine inspired by the aromas and flavors of Southeast Asia is a must.

The menu changes very often, always depending on the market, but there are some proposals to illustrate the diner: pancake rolls with sweet-chili from pipparra, Iberian pork ribs with Korean sauce, panaeng oxtail curry, fried brussels sprouts with Vietnamese sauce ... And so on.

Address:

Tres Peces, 15.
