There are little stories that make things savor with another perspective.

José Cano's could be one of them.

Born in La Huerta de Murcia in the bosom of a family with strong roots in the countryside - father, farmer and great-grandfather, fruit exporter - on Sundays it was a tradition at home to buy meatloaf so that no one had to cook.

One day he was curious and began to inquire about this Murcian delicacy

and its origin, which is attributed to the Arab culture which, in turn, had recovered it from the Rome of Augustus.

Formerly, it was consumed practically throughout the Mediterranean arc, as it was reflected in works such as 'Children eating from a pan', by Murillo, and 'The life of the buscón called Don Pablos', by Quevedo, both from the seventeenth century;

Carlos II promulgated some ordinances that marked how to prepare it correctly

and established a penalty of two years of exile for the pastry chef who left the 'official' recipe.

With the passage of time, the cake lost weight in the diet outside of Murcia and it remained as one of its typical dishes of this region.

"Throughout these years everything has changed around us; but one of the things that remains unchanged is our beloved cake, faithful to the original recipe generation after generation. Before this I asked myself: why if everything is evolving? It must remain the same meatloaf? ", says Jose.

And so was born Willy Factory, the puff pastry factory, and the willys (with a nod to Willy Wonka and his chocolate factory), a

"We respect the traditional puff pastry recipe, which the best pastry chefs in Murcia have taught us, but we have lightened the cake by using the minimum amount of butter possible," they say.

In their factory in Murcia they make puff pastry and fillings with 100% natural ingredients.

FOUR STORES SINCE SEPTEMBER

This family project started in September of last year and they have just opened their third store in Madrid -they have another in Murcia-;

has home delivery to all of Spain and take away.

In the factory we give them 75% of the cooking they need and we put them through a deep freezing process

that allows them to keep their properties intact when they arrive at the point of sale or at the consumer's home without the need to resort to any preservative or artificial ingredient".

In its menu,

twelve salty varieties and four sweet varieties

Among the first, you have to taste the classic Murcian (beef, boiled egg and chorizo), the Neapolitan (ham, cheese and tomato);

murcilla (Murcian blood sausage);

glaciar (cod with tomato) and duxelle (mushroom and caramelized onion).

They have a vegan version, Flora, stuffed with heura, potato, caramelized onion and carrot and made with margarine instead of lard.

Oporto (Iberian sirloin with Porto sauce) is another very good choice.

The sweet part is called Goya (pastry cream and apple);

salzillo (cream cheese);

Greco (chocolate brownie with raspberry) and De Bussy (chocolate cream with hazelnuts).

The idea is to adapt the menu according to seasonal products.
