Antonio Sáez

Paolo Casagrande
and little by little he earned his place in the kitchen, thanks to his innovative, contemporary and nuanced desserts.

The Catalan chef's philosophy is based on taking care of the details and putting all his passion in each dish he creates.
"I get up in the morning thinking about pastry and at night I go to bed with the same idea,"
explains the chef.
Donnay is always committed to innovation and at Lasarte, he and the entire team are clear: "We are in a three-star restaurant and that has to be noticed."
Its nine-course tasting menu focuses on light and fresh desserts to end the experience with a good taste in your mouth.
The
mixture of flavors
and
constant change
is what the Catalan chef is looking for when creating his dishes.
In 2016, when the restaurant received its third Michelin star, the final dish of the tasting menu was "a dessert of coffee, cocoa, black garlic and raspberry. It was very new, the black garlic in desserts had not been seen much in the kitchen ", recalls the Catalan chef.
Xavi Donnay's
recipes
have become a reference for other restaurants, thanks to his courage when it comes to mixing flavors.
The restaurant's petisúes are a signature dessert of the chef,
"people try them and go crazy, they are very surprised at the taste level"

Every little detail of the dessert and its plating
is handmade

"We do everything ourselves, we try not to buy anything because of the level that the restaurant sets us, if I worked in another place maybe the decoration would buy it", argues Donnay.
At Lasarte, excellence is the brand of the house

"We seek to make dishes that do not go unnoticed, that they become classics and that people remember them. We want them to be desserts that are worthwhile and are not going to disappoint," he continues.
