As flavorings and natural preservatives in mayonnaise, oil extracts and distillates of essential oil raw materials (hydrolytes) from plants characteristic of the Crimea are used: rosemary, celery, dill, basil and others.

“Oil extracts are created from dry plant materials, which we grind with the addition of a small amount of ethyl alcohol,” Elena Nozhko, associate professor of technology and equipment for the production of fats and essential oils at the Crimean Federal University, told RT.

According to her, the distillates of essential oil raw materials from aromatic plants contain a large number of essential oils and biologically active substances, which "partially fulfill the function of preservatives and can replace artificially produced phenolic compounds."

According to scientists, both oil extracts and aromatic water contain valuable chemical compounds that add flavor and aroma to the product. The composition of mayonnaise includes a blend of vegetable oils, dry egg powder, guar and xanthan gum, as well as water. According to Crimean researchers, the shelf life of the resulting natural product is one month. Such mayonnaise, according to experts, is suitable for a healthy diet.

Product analysis at the Crimean Agricultural Research Institute has shown its compliance with GOST requirements. Scientists have obtained a patent for the technology of mayonnaise production.
