And this morning heading to the Basque Country… Cambo les Bains

Recognized since Antiquity for its thermal virtues, and since 1900 also for the therapeutic virtues of its air! Which very quickly made it a health tourism destination, at the same time well launched by the mayor at the time who was Pasteur's assistant, Professor Grancher. The section from Cambo-les-Bains - Sare is very wild, mountainous... the landscapes are spectacular, and what's more you cross very typical small villages. And after the effort, comfort! We head to the Puyodebat chocolate factory/museum in Cambo. Christophe is passionate about cocoa, who travels the world in search of the best cocoa beans…. And who was trained in Bayonne. COLOMBA

Shaped like a dove, as its name suggests, colomba is a traditional Italian Easter cake.

It originates from Lombardy but it is eaten almost everywhere and its taste resembles a panettone of which it shares many ingredients.

There are 1001 legends, each more eccentric than the last, about the creation of this cake. The truth is probably that in the 1930s a large company that manufactured panettones sought to market a derivative product later in the year to make its production workshops profitable.

Since 2005, a reserved designation has governed the production of this dessert, which meets many criteria, making it quite difficult to make at home because it requires several liftings. In total, it lasts for almost 20 hours. Flour and leaven are also specific

A candied fruit brioche with dove icing

- 1 egg white

- 1 tbsp of almond powder
