Walk in Ireland

Vanessa D-7 before St Patrick's Day, the opportunity to fly to Ireland 

...and discover the green side of the Emerald Isle, which we don't call it like that by chance.

Already because it is one of the rare countries on the globe to be so green, 40 shades of green - when you fly over Ireland before landing it hits you straight away.

And then there is the essential green shamrock - which all Irish people paint on their faces on St Patrick's Day - which is, along with the harp, the symbol of the country.

So why ?

Because St Patrick simply used a green shamrock to explain the story of the Holy Trinity to King Aengus in order to convert him.

So you wanted to make us experience Dublin in green mode?

Yes because it is a lung in which we come to recharge our batteries after the festivities.

As it is a small town this is easier.

We switch to bike or ebike mode like the Irish.

Even supervised visits to follow in the footsteps of writers like Oscar Wilde and James Joyce are done by bike.

We drive Irish style along the “Liffey”.

We spend the afternoon at the “Phoenix Park”, 700 ha - twice the size of Central Park - At the end of the day we see deer and fallow deer frolicking.

And hopefully the Irish president.

He doesn't wander around.

He resides there.

And as Dublin is also by the sea, you have some salty suggestions...

Then you have to jump on the DART, the train that runs along the coast.

Either towards the North to Howth, a typical, very colorful fishing village.

We eat good fresh fish there.

Either towards the South to Greystones.

There is an excellent vegetarian restaurant: “The happy Pear”: pun: pear like pear and twins.

Two brothers run the restaurant.

Or otherwise still south of Dublin: in Down Laery for a nice cold water bath: it's the Irish ritual!

And where do we sleep?

In a sustainable hotel: The Iveagh garden.

It's an entire family that runs it.

It only runs on hydraulic energy, water flows 50 m underground.

Around 100 euros per night.

TEA

A millennial drink, tea obviously draws its history from Asia.

It is a world as complex and diverse as that of wine, with very strong notions of terroir and a multitude of tastes and flavors.

Main varieties: black (fermented leaves), green (unfermented), oolong (semi-fermented greens), white (from the buds of the first leaves), smoked…

It is obviously drunk with a codified ceremonial

Pay attention to the rules for preparing it: water temperature / infusion time.

It can be used in cooking.

Infuse it in fat cold or hot.

Here are some ideas: cook your rice or vegetables in tea / add the bottom of your teapot to a sauce: infuse it in cream for baking.

RECIPE - POULTRY WITH GREEN TEA

Ingredients

- 1 chicken

- 3 tbsp of smoked tea

- 1 carrot

- 1 onion

- 1 lemon

- 1 leek green

- Salt pepper

Preparation

Fill the casserole dish with water and bring it to the boil / add the tea and let it steep for 6 minutes / filter it put the water back into the casserole dish: add the cut vegetables / poach the poultry for 40 minutes over low heat / serve with fried potatoes or vegetables
