ASPARAGUS

It's THE vegetable that marks the arrival of spring, asparagus is already here this year (a little early) / and good news, it's not too expensive and quite tasty!

These are obviously greenhouse asparagus, because they fear frost.

There are different calibers, green and white

You remind us of the difference between the two.

The white one grows underground, does not see light (therefore no photosynthesis).

Green ones grow out of the ground and therefore contain chlorophyll.

To taste, the white ones are softer and sweeter, the green ones are more vegetal, you have to peel the white ones (except the very fine ones) but not the green ones, you just remove the little pimples.

In terms of cooking, what do you recommend??

Depending on how you are going to eat them.

Cold with mayonnaise: steam or in a pan with a little water, olive oil and a lid.

You can also roast them, that is to say, cook them gently in fat, covered and turning them regularly.

Also try cooking them in foil in the oven with a dash of olive oil, lemon slices and a little sage.
