Skiing with this eagle, seeing it fly freely, following us, it's a suspended moment of incredible beauty and it's there that we become aware of the power, the performances of this bird...a privileged moment that Jacques Olivier , who is a falconer, organizes every winter in Morzine. It's a free 45-minute adventure, for 4-6 people. Even if it obviously creates curiosity among all skiers. And that starts discussions.

And that’s the goal: to make us aware of the reintroduction of this “giant”, 2m50!!

And 7kg. So this white-tailed eagle had disappeared from France for 130 years. While it is a bird that has gone through history, which was very common. This is what pushed him to look for it, to go especially to the Balkans and to reintroduce it in 2022 at the edge of the lake. Lake Geneva, in the Parc des Aigles du Léman. 350 eagles / 80 species. Today there are 5 pairs of Bald Eagles.

Their history goes back to the time of the large communal ovens (middle ages) / Rabelais talks about it in the 16th century in Gargantua…

They were used to test the temperature of wood-fired ovens in the absence of thermometers: we threw small pieces of pasta / too cold, they did not rise, too hot, they burned.

The recipe is super simple, that of a bread dough

- 200 gr of flour

- 15 cl of lukewarm water

- 1 pinch of salt

- 7 g of fresh yeast

Dilute the yeast in water / mix the flour and salt / add the water and knead / put in a bowl, cover with film and leave to rest for 2 hours in a not too cool room / roll out the dough and cut it into small pieces about ten cm / cover with a cloth and leave to rest again for 1 hour / Bake in an oven at 250°

Filling: snail butter, goat cheese and honey, rillettes…
