It is still plenty of sprouts season in the Netherlands. In this dish the Brussels sprouts are first stir-fried and then caramelized with some honey. Then they go into the oven with salty bacon and sweet pear. A surprising recipe that is not difficult to make.

Five ingredients that you need

  • 1 roll of fresh puff pastry
  • 100 grams of bacon
  • 400 grams of sprouts
  • 2 tablespoons honey
  • 2 hard pears (Doyenné du Comice), peeled and in pieces

    This is how you prepare the dish

  • Preheat the oven to 220 degrees and cover a baking sheet with baking paper.
  • Cut a thin slice from the bottom of all sprouts and remove unsightly or damaged leaves. Wash the sprouts, pat them dry and halve them.
  • Fry the bacon in a dry frying pan until the fat is released. Then add the halved sprouts and wok for about 5 minutes until the sprouts have softened.
  • Add the pear pieces and stir-fry for another 2 minutes. Add the honey and stir everything for another minute. Turn off the heat and let cool.
  • Roll out the puff pastry on the baking sheet and divide the sprout mixture over it. Leave a 5 centimeter border around. Fold the edges inwards and grind some pepper over the galette.
  • Bake the galette in the middle of the oven for 20 to 25 minutes until golden brown and done.
