Kale is a typical fall and winter vegetable, harvested from September to March.

It is rich in vitamins A and C, calcium and fiber and therefore very healthy.

You can make much more than just stew with kale.

For this bean dish, stir-fry the kale until it has shrunk a little.

This way the kale will keep its bite.

Five ingredients for a bean casserole with kale, bacon and cod

  • 2 tins of butter beans (giant beans), rinsed and drained

  • 300 grams of kale

  • 4 vine tomatoes, in pieces

  • 100 grams of smoked bacon strips

  • 4 cod fillets

Vegetarian alternative: replace the bacon with vegetarian bacon or sun-dried tomatoes.

Choose a fish substitute for cod or omit it.

For example, you can make a bean dish with kale, bacon and cod

  • Fry the bacon strips in a dry frying pan.

  • As soon as the bacon starts to get crispy and enough fat has released, add the tomato pieces and the kale.

  • Let the kale shrink while stirring.

    Then add the butter beans and heat for a while.

    Season with freshly ground pepper and toss well.

  • Meanwhile, heat some oil in another frying pan and fry the cod fillets for 1 minute on high heat.

    Reduce the heat slightly and fry the cod for about 6 to 7 minutes until the fish is cooked.

  • Divide the bean dish among four plates and place a piece of cod in the center of each plate.
