Viktor Lind is one of eight finalists from Älvsbyn in the north to Vellinge in the south who compete for who makes Sweden's best sandwich. And here is a great passion for just sandwiches: Everyday, Viktor Lind runs a sandwich bar in Malmö with his brothers.

Hellegan sandwich

Last year's SM sandwich consisted of sourdough bread topped with soy and vinegar glazed beets and marinated feta cheese and gave him a second place. This year he is investing in hellish:

- It's a sandwich with a vegan majo with harissa, and then we have some steamed white cabbage, some baked mushrooms marinated with some soy, pickled carrots and baked carrots that we fry with a little citrus glaze and then a little kale in a herb vinegar dish and a ricotta cheese solid on cashews ...

That sounds pretty much like a sandwich?

- It's a maxed-out sandwich. I thought that everything sounded good, and good plus good usually becomes good.

Want to practice before

He has not been in hard training, he says, but the SM sandwich will be introduced on the sandwich bar's menu next week to allow him to practice doing it a few times before the competition on November 8.

- It's fun if you win but at the same time if I didn't win it is not the whole world. It's a fun thing to get away a bit and meet other people from the industry as well, he says.

The SM competition is organized by the industry organization Sweden's bakers and confectioners and is held during Stockholm Food & Wine at Älvsjömässan.
