• PROFILE The Japanese pastry chef born in Seville who has revolutionized Getafe with her delicate sweets

There is less time left for Madrid Fusión to close its 21st edition, a moment in which

two of the most anticipated contests are concentrated

and that have to do with the recognition of the great promises of the kitchen: Chef and Revelation Pastry Chef.

And, precisely,

the winners of both contests have been announced in the same award ceremony

.

First of all, the names of the pastry chefs (workshop and restaurant) who have stood on the podium have been revealed, and we are left with them.

At the top,

Noelia Tomoshige

, a Japanese pastry chef born in Seville who, from her workshop and shop in Getafe,

fuses Japanese and French pastry shops and winks at the Spanish tradition

.

Noelia, who opened MonroeBakes in Getafe in 2021, has competed -in a blind tasting- with a sweet that is a tribute to her origins.

Presented in a delicate box,

Furusato

-which is the name of the dessert-, is a subtle bite featuring sudachi (the king of Japanese citrus fruits) and chestnut honey from Andalusia.

It is a snack with different textures inside, a green mirror-like glaze and a mousse

that covers it entirely.

Delicacy and balance highlighted by the jury,

chaired by the great pastry chef Paco Torreblanca

and accompanied by Jordi Butrón (Espai Sucre), Fernando Sáenz (Obrador Grate), Ausiàs Signes (Revelation Pastry Chef in 2022), Estela Gutiérrez (Estela Hojaldre) and the gastronomic journalist Julia Pérez.

Second place went to Irene Lluch (Son Jaumell, in Mallorca) and third to Arnau Casadevall, from Divinum (Girona).

The rest of the finalists: Laura Suárez, from Habatonka Factoría Dulce (La Orotava, Santa Cruz de Tenerife);

Álvaro Holgado, from Chef Alia Pastry Shop (Cáceres) and Áser Martín, from Tabaiba Restaurant (Las Palmas de Gran Canaria).
