If there is a contest that has a draw -with the permission of the rest- in Madrid Fusión, that is the Revelation Chef contest that throughout its history has fallen to some of the most influential current Spanish chefs (Dabiz Muñoz, Ricard Camarena, Rodrigo de la Calle , Oscar Calleja...).

And in this edition, the award has gone to two talented youngsters and promises of Basque cuisine:

Javier Rivero and Gorka Rico

,

from the Ama Taberna restaurant

(Tolosa, Guizpúzcoa).

From a charming restaurant in the old part of Tolosa (Aroztegieta, 13), these young chefs

recover recipes linked to tradition

and vindicate the cuisine of the Basque farmhouses.

And what did the jury, made up of a hundred culinary journalism professionals and gastronomy fans, value?

"Technique, spark, elegance and a sixth sense

".

Juan Carlos Garcia, second.

In 2018 they opened a tavern that a few months ago they have transformed into a more gastronomic space, where you can choose between dishes to share or the tasting menu.

And it is that Javier and Gorka flee from the idea of a classic tavern to

focus on the environment, the product, its season and its suppliers

, inspired by the philosophy of Elkano, where they both worked.

Abraham Ortega and Áser Martín, third.

They were accompanied on the podium by

Juan Carlos García

(Vandelvira, Baeza, Jaén),

a disciple of Albert Adrià

in the ElBarri group, with his creative and modern cuisine in which there is no shortage of nods to the rural and to his Jaen roots, and

Abraham Ortega and Áser Martin

, (Tabaiba, Las Palmas), determined to put the memories and flavors of his Canary land on the plate.

Sergio de la Orden, from El Mosqui (Cabo de Palos, Region of Murcia);

Juanjo Mesa León, from Radis (Jaén);

Pablo Fuente, from Taberna Bacus (Agua Dulce, Almería);

Juan Monteagudo, from Ababol (Albacete) and Alba Esteve Ruiz, from Alba (Alicante)
