On Sunday, January 22, the year 4721 begins. In China and also in the countries that welcome millions of Chinese who celebrate the

Year of the Rabbit with all kinds of festivities,

including gastronomic ones.

In Madrid, for example, China Taste takes place, a culinary conference promoted by the Cultural Center of China, with the support of the Embassy of the People's Republic of China and the Madrid Community and City Council.

After a two-year hiatus due to the pandemic, this event returns,

turning the capital into the great showcase for the gastronomy of the Asian giant

.

And in this sixth edition, as in the previous ones, the objective is to bring the richness of its different cuisines and

its eight schools closer to Madrid: Sichuan, Shandong, Guangdong, Jiangsu, Zhejiang, Fujian, Hunan and Anhui.

For this, they have the participation of 13 leading restaurants of authentic Chinese cuisine, which offer

special menus from now until Sunday, February 12 (from 28 euros to 90 euros).

, flagship of the restaurant group of the same name and dining room that several decades ago changed the idea we had of Chinese cuisine (Don Ramón de la Cruz, 6).

María Li and Felipe Bao are committed to a gala and haute cuisine proposal -available throughout the month of February-, whose star is

their famous Beijing imperial duck, made with a recipe that dates back to the 15th century

and served in two passes: skin crispy duck with beluga caviar and traditional lacquered duck with their crepes.

But first, wonton and foie soup;

bridal veil mushroom dim sum, with black truffle;

king scallop cannelloni and its mojama;

Sichuan style sea bass with cashew

and crunchy lobster cannelloni with sweet and sour and slightly spicy béchamel sauce.

four dishes to share (lacquered duck magret in orange sauce,

kung pao prawns, slices of picaña and crispy chicken and seafood kubak

-a true pioneer in Madrid (Tudescos, 5), renovated from top to bottom in 2018- they have designed a special proposal for China Taste with a starter,

The restless Chinese chef based in Madrid has designed an

ad hoc

offer that starts with razor clams in leek oil baked with caviar, slow-cooked scallops,

noodles with Cantonese bacon and smoked fish

They are followed by xiaolongbao with red prawn sauce, fish in sweet and sour sauce and low-temperature grilled Asturian beef.

As a sweet end, the ice cream with grated coconut mousse, cheese, apple and mustard (80 euros).

After a couple of starters, two dim sums arrive (Shanghain xiaolongbao and beef jiaozi) and the seafood soup.

They follow a first course to choose between four (for example, the

sautéed prawn with almonds in XO sauce

), a second course to also choose between four (a good option is to share -for three or four diners- the

Mongolian-style lamb leg with crepes)

's New Year's menu -opened at the end of 2020 in the Salamanca neighborhood (Lagasca, 81)- is the lacquered duck, the house speciality, preceded by pork xiaolongbao, beef xiumai and three starters: duck foie, Shanghai-style smoked sea bass and

(Sor Ángela de la Cruz, 22) has already made a name for itself in the capital's showcase.

For this occasion, he offers a proposal with three starters (veal shank marinated with spices, free-range chicken bathed in ginger and
