From then on, opening Landa in Burgos meant "

taking advantage of the fact that many clients from Madrid traveled to the north of Spain on vacation to offer them something else.

They had the rental management of

La perla

in San Sebastián and decided to open

Landa

as a good stop, quiet and with a classic service where you can eat well", explains the person currently responsible for the image of this emblematic place.

With the principle of "eating well and resting in a place that offers good services",

Landa grew and expanded until it had a bar and a hotel

.

To do this, she even acquired a tower in Burgos that was added to an architectural structure that has always attracted the attention of her clients.

A building that includes a 14th-century tower and

as it was as surprising to those who discovered it in the 20th century.

BLACK PUDDING WITH EGGS, SOMETHING MORE THAN JUST A DISH

"The black pudding was relegated to a dish known as the pot rotten, with red beans. He took it out of there and

dignified the black pudding as an independent dish combined with the eggs.

Now it is seen as a mythical dish, but then many were surprised . We continue

with that dish, which everyone likes and is very striking. Although the rest of the menu is also in high demand," says Guzmán.

At that time, Jesús and Carmela, his wife, took steps to change the established order.

"My grandmother Carmela was an artist, the first woman in Burgos to get her driver's license... and

a collector who combined antiques with other very different objects that have marked the decoration of Landa

with a very particular style," says her grandchild.

As for the

type of clientele, those responsible admit that there is not a single type

"We have gone from having the usual customers, who still continue, to expanding our visitors

to a fourth generation with many more young people

who appreciate Landa after having visited it as children when they passed by by car," explains Guzmán Alameda.

Among Landa's data,

the volume of work recorded daily should be highlighted, with an average of 600 people who can go through the bar, another 100 through the restaurant

"Landa does not close any day of the year," explains Guzmán, who confirms that Audrey Hepburn herself ate and slept in Landa.

went in the 60s with her husband Mel Ferrer when he was filming in Spain, being attended by Jesús Landa with all the love and good work that characterized him.
