It is true that the heat waves are making summer in Madrid a little harder than other years, but August is the perfect month to enjoy the capital at a different pace.

Behind this place are the Austrian chef Manuel Auer and the businesswoman Alejandra Álvarez, a couple who conquered Zahara de los Atunes with their proposal (with the Tía Juana Tavern) before jumping to the big city.

There are many typical Andalusian dishes on the menu, although some original touches are not lacking, such as the shrimp waffle with tuna tartare and the tomato stuffed with homemade tuna pate with ajoblanco and toasted almonds.

scented with fermented garlic and creamy red cabbage salad.

Gourmands also have a choice, with a pumpkin tartlet with Italian meringue, honey tile and delicious pumpkin seeds.
