In Old Billingsgate, the old fish market of the British city, and in the presence of half the world of gastronomy, all eyes have once again turned to the Danish city, to the dining room that until a few hours ago was the second on this famous list : Geranium, by Danish chef Rasmus Kofoed.

Founded in 2007, this chef - the first in Denmark to obtain three Michelin stars, in 2016 - hasn't taken long to climb to the top of the 50 best dining rooms in the world: in 2012 he was ranked 49th;

last year, in the second.


Unique even in its location, on the eighth floor of the Parken Stadium, a football stadium, Kofoed creates from the Scandinavian seasonal pantry dishes bursting with delicacy, beauty and flavor.

At number 2 on this list -recognized for some;

capricious for others and even "assassin", as Ferran Adrià described it years ago - which celebrates its 20th edition, is placed by the Peruvian Central, followed by Barcelona's Enjoy and, in fourth place, DiverXo by Dabiz Muñoz.

Asador Etxebarri, which was in third place, is in sixth place this year.

Six Spanish dining rooms have been placed among the first 50.

Added to the three already mentioned are Elkano, who remains in 16th place;

Mugaritz, temple of Andoni Luis Adúriz, which goes from position 14 to 21;

and Quique Dacosta, who returns to the ranking in 42nd place. Azurmendi falls from 49 to 55.

In addition, Aponiente, Angel León's restaurant in Puerto de Santa María (Cádiz), has been recognized with the Flor de Caña Sustainable Restaurant Award.

The idea was born in 2002, as a modern alternative to the Michelin stars of the French guide.

Despite the pandemic, its impact and planetary visibility continues to increase.

A

jury made up of 1,080 experts

is in charge of choosing the list.

Its members include journalists, chefs and profiles of the profession and traveling foodies.

Through an electronic system, each member of the jury chooses 10 restaurants each year.

Due to the pandemic this has been modified and they have chosen 7 from their region and 3 from other parts of the planet.
