The new space of the Mabel Hospitality group, where Rafael Nadal, Pau Gasol and Cristiano Ronaldo are partners, is inspired by the Mediterranean and Italian recipes of the 50s and 60s. Located next to its 'brother' Tatel on Paseo de la Castellana , theirs is a

commitment to creativity, with a base that values ​​the most traditional raw materials

On the menu, where organic produce prevails, we find starters such as rice croquettes with mozzarella cheese and vitello tonnato;

From the hand of renowned chef Matthew Kenney, author of a dozen vegetarian recipe books, this concept lands in Madrid where vegetables, fruits, cereals, legumes, nuts, mushrooms, seeds, superfoods and flowers shine.

like their sushi pieces, their hamburgers or their 48-hour sourdough pizzas.

Behind the letter there is a clear idea to promote respect for the environment and nature.

Everything is consistent in this space, where a simple and minimalist interior design in dusty pink tones gives prominence to food.

From their menu, you can start with an avocado dukkah, avocado covered in nuts and spices on cashew yogurt with pita bread;

continue with the artichoke tiradito or the shiitakey ceviche and try its rich aubergine moussaka made with oat milk bechamel.

Located in front of the Parque del Oeste, this restaurant opened its doors in January and shows traditional cuisine, always with seasonal products, and the avant-garde, where the detail makes the difference.

We start with the gastronomic proposal, with

a short but very well executed menu

The appetizer has three candidates: the unstructured gilda trio -with a spherification of olives-, the ham croquette and the brandade-type cod fritter.

For those who can't resist a good steak tartare, here they prepare it as a sirloin steak with mustard ice cream and puffed bread, with a smoked touch.

The very carnivorous will have a hard time choosing between the crispy suckling pig with ear, pickled cucumbers and strawberry hoisin, cooked for between 13 and 14 hours, or the incredible roasted boneless suckling lamb shoulder with shepherd's crumbs.

Among the fish, the confit cod with honey veil, hazelnut cappuccino and aromatic foam stand out.

The creamy bull tuna rice with spicy tomato stew, ventresca and smoked air from Idiazabal is one of the 'hit'

This is how this new place is presented that invites you on

a trip to French Indochina and Japan in the 1940s

, with a colonial essence of countries like Vietnam, Cambodia or Japan.

To whet your appetite, we mention the Cantonese torrezno and the sea bass ceviche, the cheek with Thai curry and the needle bahn bao.

The Japanese-Iberian influences can be seen in Lady Macao's patatas bravas and stewed gyoza.

Peking roast duck crepes is one of the most successful dishes of the place.

It also has a wide (and good) variety of nigiris, which should always be taken into account.

The restaurant is inspired by the vacation residence of the grandfather of Javier Cheng, co-founder of the group, in Singapore, on the border with Malaysia and in the square where everyone met.

The aesthetics of the space is signed by the Cousi interior design studio, where everything revolves around a circular floor plan with two levels, reminiscent of Asian rice fields.

This Italian from the group SLVJ

wants to conquer Madrid with a casual, instagrammable concept (it emulates a vintage circus full of velvet and powerful colors) and a

classic-based cuisine with signature touches

.

At the forefront of the kitchen is the Venezuelan chef Fermín Azkue, who bets on local raw materials -be it meat and fish- and products brought from Italy;

the cheeses arrive three times a week and the dry pasta comes from the Neapolitan municipality of Gragnano.

The proposal tastes like fresh and stuffed home-made pasta -prawn ravioli with hollandaise foam and dill are an excellent choice-, dry pasta, baked pasta and three appetizing risottos;

They also have pizzas, which they prepare with semi-integral flour and a fior di latte mozzarella base.

We can't help but recommend their raw dishes: the three carpaccios -red prawn from Denia, Galician octopus and sirloin steak- and a bluefin tuna tartar with Osetra caviar and cured egg yolk.
