A purpose that is beginning to be rewarded with prizes, such as the one that

The Best Bread in Madrid, a
contest organized by Club Matador that has just celebrated its fourth edition.
It is a cafeteria-bakery-pastry shop opened for a little less than a year -on Magdalena street, between the Lavapiés and Las Letras neighborhoods, where its

(Verónica, 9) is located - which has with its own bakery and from which baguettes and loaves made with
organic flours
, brioches, croissants and other artisan buns come out, and coffee, of course. "This award is an honor because it is important that small bakeries like ours are valued," said

, one of the owners of Acid Bakehouse, along with Sasha Zavgorodniaia.
And what are the
characteristics
that support this bakery as the creator of 'The Best Bread in Madrid of 2021'? It is

At the end of this fourth installment, another
five renowned bakeries
have arrived
(Levain Tahona Artesana, Marea Bread, Obrador San Francisco, Panadarío and Panem Madrid, winner in 2020), professional artisans with their own
bakeries
who
have presented two
one-kilo
loaves
, made only with wheat flour, yeast, water and salt.
The decisive test to find the best bread has been a
blind tasting,
held at 12 in the morning of this Tuesday, November 23, in which the jury took into account five criteria:
appearance, doneness, crumb, smell and taste of each loaf
.
The contest - inspired by which for 27 years it has been organized in Paris to choose the
best baguette in the city
and whose winner becomes a supplier to the Elysee Palace for a year - seeks to vindicate
the profession of baker
and those slow fermentation preparations with natural products.
Acid Bakehouse
(Magdalena, 7) will receive the stamp that accredits it as the author of the best bread in Madrid 2021, and will become the
official supplier
of the Matador Club for one year, as has already happened with the winners of previous editions (Crustó, Panem and One hundred and thirty °).
