Tigernuts, water and sugar are the ingredients of horchata, a summer drink

of Valencian origin

, especially from

Alboraya

(Alicante), the cradle of this tuber whose cultivation was established by the Arabs a dozen centuries ago.

However, you don't have to travel there to have

41 years ago, José Luis Monrós and Fina Galán founded a horchatería in Calle de Alcalá that is now run by their children,

Once they arrive in Madrid, they make up to 350 liters of horchata a day during the hottest months.

In addition to serving it all year round, they

"celebrate" it

every first Wednesday in July giving away an horchata with fartons, an inseparable companion of this tigernut drink.

Miguel and José Manuel García López

are the fourth generation of a family that has been making horchata for the people of Madrid for more than 100 years, always with Valencian tigernut, water and sugar. It all started with the

great-grandparents

, Francisco Guilabert and Francisca Segura, who from

Crevillente

(Alicante) opened a water

bottle

in Cedaceros street

in 1910

. Later, his grandparents María and Manuel moved him in

front of Las Cortes

until the Civil War broke out. Once this was finished, the kiosk settled in the Plaza del Carmen and, since

1944, it has reigned in Narváez

. Open from April to October, when the heat rages, they usually sell between

80 and 100 liters a day

, "It depends on how the street is. Lately it has gone down, with

so many terraces

, people have forgotten a bit about us," says José Manuel.

This panorama has little to do with that of the

60s of the 20th century

, when Madrid was full of "aguaduchos and kiosks, almost all of them opened by people from Alicante. There were about 300 like ours," recalls José Manuel.

Despite the passage of time,

77 years

, the offer has not changed.

"We continue with the three drinks that we have always sold:

tiger nut horchata, slush lemon and barley water

, a traditional drink that, unfortunately, is falling into oblivion," concludes José.
