With Nagore Irazuegi and Rodrigo García Fonseca running the business, this modern vermouth store has become an address to take into account for all lovers of product and things well done.

In addition to the skewers (such as Gilda Joxefa 2.0: piparras mayonnaise in puffed bread, olive paste, anchovies and EVOO pearls), we must take into account dishes such as hake battered with piquillo emulsion and green sauce, tripe cod or turbot (off the menu).

Santerra Neotavern

After succeeding in his restaurant Santerra on Calle General Pardiñas, the young chef Miguel Carretero inaugurated this casual-looking Neotaberna where you can taste some of his more informal dishes.

Among them, the ham croquettes, chosen as the best in Spain at Madrid Fusion 2018. Also, scallops with warm ceviche, his particular vision of the calamari bite (fried squid on brioche bread with chipotle mayonnaise and fresh herbs) or torrezno cut with green tomatillo sauce.
