Atomo Molecular Coffee has just developed a process for making coffee without beans. The drink is overwhelmingly made from recycled plant materials, reports Science Times relayed by Slate .

This new kind of coffee could be marketed as early as 2021. To reproduce the drink, which mimics the original, the American company called on Chahan Yeretzian, a chemist at the Coffee Excellence Center at the University of Applied Sciences in Zurich .

A social and ecological product

The researchers first had to develop a "molecular map" of coffee, that is, determine its exact chemical structure. They then looked for the different plants that naturally produce caffeine and that were recoverable from farmers' waste.

After washing and preparing the vegetables, a roasting and grinding step made it possible to reach the caffeine content with that of the original coffee. According to Chahan Yeretzian, this coffee, made from 95% recycled plants, perfectly reproduces the experience of a real coffee by avoiding the environmental and social problems generated by the culture of coffee.
