Hemolytic uremic syndrome, also referred to as so-called hamburger disease, is caused by E. coli in uncooked foods. Especially for the same meat, minced meat in a hamburger is more dangerous than steak, and it can be more fatal for children than adults.
A medical journalist Cho Dong-chan will explain why.
<Reporter> In
1982, a group of food poisonings occurred in the United States, and the investigation revealed that the cause was O157 intestinal bleeding E. coli that survived the minced meat in the hamburger.
This E. coli does not live in lean meats such as cattle, pigs and chickens.
Germs in the living environment were transferred to food ingredients through kitchen utensils such as human hands, knives, and cutting boards.
You can also get a hamburger disease through milk or vegetables.
For meat, minced meat in a hamburger is more dangerous than steak because of the difference in cooking method.
When cooking at the same time, minced hamburger patties cook faster than steaks.
The problem is that the inside of the steak is less of a human hand or a kitchen utensil, so it's okay to cook it less, but the minced meat that comes in contact with the hand and knife can survive germs.
Even though E. coli enters the body, most of them recover from symptoms of abdominal pain and diarrhea, but because of the toxins produced by E. coli, one out of ten people suffer from kidney damage.
In particular, children have more toxin receptors, which is more dangerous than adult patients.
[Park Sung-man / Professor, Department of Pediatrics and Youth, Koguro Hospital (Patient's doctor): This is a typical symptom of hemolytic toxic syndrome because of kidney function and urinary symptoms. The situation is progressing while dialysis treatment.] For
prevention, the cooker must wash his hands and clean the kitchen environment.
Food must be cooked at a temperature of 70 degrees or higher to eat safely.
If you have vomiting, abdominal pain, and bloody diarrhea, you should suspect the disease and go to the hospital quickly.
