Scallions of about 20 centimeters typical of Catalonia. They are cooked on fire, accompanied by romesco sauce and eaten with their hands. Before you have to remove the outer layer, usually carbonized, so staining is the most normal, hence a bib is offered to the diner. They are in full season.
