Our critic visits this tavern where Iván Sáez's team prepares a kind of general compendium of traditional Spanish dishes

This week we wanted to return to the growing sector of renewed urban taxes, with good cuisine and less aggressive prices than those imposed in Madrid. So we went to La Tajada, the traditional tasca updated that Iván Sáez, one of our best chefs, has installed just behind his Desencaja .

La Tajada , with its minimalist decoration that distracts little from what they serve us - with an impressive rhythm and kindness - responds to what we were looking for, and by far . Sáez's team, apart from a magnificent menu of the day at 12.80 euros, prepares a kind of general compendium of Spanish popular dishes, and as there are half portions or even small bites to simply try some of them - well, a toast covered with the canonical salad of the house-, you can quickly organize a dazzling parade of popular Spanish cuisine . And, with a bottle of good Bobal requenense, La Malkerida 2016 by Bruno Murciano, between two people we spend just over 60 euros on all this:

The ham croquettes and the cod fritters - well light, with mayonnaise and peppers - that all the bars should decorate. Some sinful chicken wings boneless with sweet chili sauce and liliáceas . A bit of a steak tartare superbly cut and seasoned. Addictive stir-fried potatoes with torreznos. A small bowl of fabada with a sausage of first. The classic and so madrileño marriage anchovy in salted / anchovy in vinegar with a piparra and a slice of red pepper. A big house dish: quail stewed in chamomile sauce . A dish deceptively populachero: the hamburger, of course. But it is beef wagyu, with lettuce, tomato and cheese, undercooked as we ordered, and so tasty that it does not need any sauce. A wonder.

The portions were so well calculated that we still arrived with some strength at the four cheese cake : comte, cream, brie and mascarpone. Long live France, Italy and Spain! Original, unctuous, a great ending.
