Located in a striking corner of the Chamberí district, in the middle of José Abascal street, Rosconería Bargueño looks more like a jewelry store ... But no. Actually, it is the boutique workshop of Teto Bargueño, chef and owner of the restaurant Zurito de Pozuelo, as well as the fourth generation of a family of bakers. Opened last June, it is a store specializing in roscones made with sourdough whose intention is to seasonally adjust this typical dessert offering a new product: the bargueños, sweet and savory threads filled with delicious combinations and toppings.

With an appearance similar to classic roscón, they differ in consistency, texture and, above all, the ingredients . With the right point of sweetness, a fundamental detail not to empalagar, these aerial buns are closed in a loop and do not carry butter. The necessary fat is supplied with butter and thus the desired mass and consistency is achieved.

The secret is in the dough

With all this, we can say that it is an artisan elaboration, with double fermentation of more than 24 hours (hence the alveoli worthy of any bread of sourdough). That said, the most surprising are the fillings , a combination of salty and sweet products, which make them unique.

Within the variety of flavors, it is possible to try foie and pistachio bargueños, tapenade and anchovy, sobrasada and almonds or more curious flavors such as Madrid tripe or Asturian fabada . Among the sweets, there are cream, strawberry, dulce de leche, truffle, mango, nutella ... And they can be ordered in various sizes (large, medium or bargueñito). A perfect option to enjoy breakfast with a coffee, snack with a wine, snack or dessert in its sweet version.
