A new type of milk hits the shelves in the spring.

It will be the first vegetable milk totally identical to cow's milk. 

You may have noticed in recent years with the vegan trend, we have seen a myriad of vegetable milks land: milk based on soy, peas, oats or coconut.

I don't know if you've ever tasted them, but they don't have much to do with cow's milk.

Difficult to froth your cappuccino with it, to have cream, to make whipped cream, cheese... In short, it's completely different. 

This new milk is molecularly identical to cow's milk.

That is to say, it tastes the same, it is consumed, cooked, mixed and worked in exactly the same way.

While it is designed without touching any animal, only based on plants... 

How it is possible ? 

Thanks to special mushrooms that we will let ferment, so that they synthesize casein, the main protein of milk.

The one missing from all so-called “alternative” milks.

So, if you are allergic to cow's milk proteins, you will also be allergic to this vegetable milk.

But as we control its composition more finely, we can take advantage of it to remove lactose or cholesterol and have healthier milk. 

It was the biologists of Perfect Day, an American startup, who invented this production method.

The first bricks of milk (semi-skimmed and whole) will be launched next month under the Bettermilk brand.

They're also testing, right now, in several Starbucks stores to make sure it won't be rejected by customers. 

And on the price side, will it be much more expensive? 

No, that's the good news!

Prices are going to stay about the same as real dairy.

With a big difference: it will need 65% less energy and 98% less water to make it.

We talk a lot about the vegan side, but above all there is the ecological interest of having a milk with much less impact on our dear planet.
