He recommended Cate La Piperna (Infanta Mercedes, 98) because she had good references from her location on Calle Relatores. And he is right. I walk with Rosa from Colón to get hungry and we arrive at La Pipe

To make it hungry (and non-alcoholic beer) we ordered some
olives alla acolana
(olives stuffed with pork, turkey and beef) that are then "emanated and served fried", which I do not know what it is, but they were delicious. I wish instead of a non-alcoholic beer we had had some dry martinis.
We also ordered beef tongue with
tonnata
and homemade yogurt and a pickled fried ray and mint zucchini. Of course, at that time I already had two glasses of red wine pese/for my abstemious purposes on Sundays. However, the winery of La Piperna invites these weaknesses. Second we asked for a
Fresh pasta with wild boar
which was out of letter. And some
Ziti alla Genovese
, a dish "typical Genoese of the seventeenth century consisting of a caramelized onion sauce and served on a variety of artisanal pasta". And that's what the menu says, because at that point on Sunday the glasses of Italian wine were falling and I was declining. To top it off we take
Saltimbocca
with sautéed peas and boletus.
For dessert, we insist on a very good tiramisu, although they say that the best are the

I would have liked to tell you what wine I had by the glass (because there were several bottles), but I settle for telling you that La Piperna is
the best Italian restaurant in Madrid
despite other recommendations and trendy places. I just remember that everything was great. They blew us 60 euros per beard.
