The perfect day to treat yourself with pancakes!

Plain, with sugar, spread or jam, they will delight young and old alike.

The opportunity to test two recipes, one traditional and the other without gluten or lactose, easy and quick from chef Yves Camdeborde.

The opportunity (if one is needed) to treat yourself with pancakes.

Whether eaten with sugar, spread or jam, this traditional festival is a delight for young and old alike.

Although it was originally a pagan celebration, Candlemas then became a Christian feast, which takes place on February 2, 40 days after Christmas and which corresponds to the presentation of Jesus in the Temple. 

As for the tradition of eating pancakes, it dates from the 1st century AD.

During this period, Pope Gelasius I would have taken to distributing pancakes to pilgrims arriving in Rome.

Similarly, still in ancient Rome, during the Lupercalia celebrations, round wheat pancakes were eaten to ask for the return of the sun and hope that the next harvest would be good.

Candlemas is therefore also the festival of candles and light.

Moreover, in ancient Rome, many candles were lit in houses.

For the occasion, chef Yves Camdeborde unveils his two pancake recipes, one traditional and the other without gluten or lactose, for a necessarily successful Candlemas.

Traditional sweet pancakes

Ingredients :

  • 1 liter of whole milk

  • 8 eggs (4 whole, 4 yolks and 4 whites beaten stiff for lightness and finesse)

  • 350 g sifted T45 flour

  • 150 g heavy cream (for fluffiness)

  • 4 to 5 heaped tablespoons of caster sugar (for sweetness) 

  • 1 pinch of salt

  • Vanilla pod (for its suave sweetness)

  • 5 to 7 tablespoons of rum 

Preparation : 

1. Mix four whole eggs with four egg yolks.

Add a pinch of salt, four to five heaped tablespoons of caster sugar, and vanilla pod. 

2. When the mixture has whitened, add 150 grams of fresh cream, then 350 grams of sifted flour, to be incorporated gradually.

Complete the mixture with five to seven tablespoons of rum, before adding four beaten egg whites. 

Lactose-free gluten-free pancakes

Ingredients : 

  • 250 grams of buckwheat flour 

  • 2 eggs 

  • 1 spoon of honey

  • 1 spoon of almond cream

  • 1 pinch of salt

  • 1/2 liter of water 

Preparation :

1. Mix all the ingredients.

2. Leave to stand.

Prepare the pancake batter the day before if possible. 

3. If necessary, on the day of cooking, add a little water to the preparation.
