Every day, Europe 1 looks at an idea or a problem in your daily life.

After Christmas and its yule log, it's Epiphany and its timeless galette des rois.

But faced with the inflation of raw materials, the prices of the cake should drastically increase.

"The ingredients have taken between 10 and 30%" increase, explains André Devesa, manager of a bakery in Issy-les-Moulineaux.

After the yule log, make way for the galette des rois.

The French will still be able to make an abuse before promising to go on a diet, the traditional resolution of each new year.

But in the window of the bakeries, the prices are surprising.

The cake will cost a lot more this year.

In question: its ingredients, all affected by inflation such as butter, flour or eggs.

"The ingredients took between 10 and 30%"

But in bakeries, employees work hard.

Because with nearly 30 million units consumed each year, the galette always seduces.

But bad surprise in this bakery in Issy-les-Moulineaux, in the Hauts-de-Seine, where manufacturing costs are up 20%.

"From now on, making a pancake costs us almost 12 euros. The rent has evolved, the energy has evolved, the wages will increase. The ingredients have all taken between 10 and 30%. Now, a kilo of butter for example, that costs us 11%", explains to the microphone of Europe 1, André Devesa.

To please yourself

So, to avoid imposing a disproportionate increase on customers, the boss announces that he is cutting back on his salary and is counting on the possibility of selling his products for longer.

"I don't think we will go beyond January, but if we can go until the end of the month, that would be not bad," he explains.

Despite an appeal price of 5 euros per share on average, customers do not hesitate to treat themselves.

"I confess that I don't count too much. It's not something I eat every day, but you have to open the season" somewhere, ironically a customer.

In all, André Devesa hopes to sell nearly 800 galettes in 2023.
