The plant-based alternatives to traditional meat products have become many more in recent years.

But recreating the taste, texture and appearance of real meat has proven difficult.

Just like many other meat substitutes, the plant-based meat from Slovenia is made from, among other things, soy, wheat, sunflower oil and beetroot powder.

But the process used to create the cut of meat is largely shrouded in obscurity.

The company itself does not want to go into any details, except that it is "3D-engineered".

Gustav Johansson at restaurant Chouchou says that the Slovenian company uses a machine that lays the ingredients in a pattern that means that the vegan meat in practice gets both fibers and marbling that mimics real meat.

- It is very similar to meat.

They have gone down to the property level to bring out texture and appearance that have been recreated using plant-based products, he says.

Expensive option at the moment

Right now the product is not in stock, but previously the price for private individuals was SEK 700 per kilo. 

Gustav Johansson points to two factors behind the high price: The small-scale production, and distribution difficulties to the Swedish market.

- During the next year, it will come here on a larger scale.

And then the price for consumers will also hopefully be much lower, he says.

- Absolutely, 100 percent.
