"We have more than 200 references in Colmar and around 150 in the franchise that has just opened in Mulhouse", announces its founder Antoine Castillon.

This 28-year-old Alsatian started from an observation when he started in 2017: “Often, there is very little choice in restaurants or bars.

“People sometimes bug when they see the list”

“Yes, that's for sure, people sometimes bug when they see the list,” laughs the boss.

“But we are there to advise them, to help them.

Wines by the glass are offered either in 6 cl or 12 cl. And it is possible to ask for any on the menu.

“Almost all of them have opened bottles.

I think that out of the 200, 185 are currently,” says the entrepreneur, who uses the system developed by “Coravin” for this.

Consider a device that allows you to use it in a bottle without removing its cork.

A very thin needle is then inserted into it “and gas, argon, is injected.

This makes it possible to preserve wines for several months”, specifies Antoine Castillon.



This "little fountain" also participates in the show according to him and limits losses, "less than 5% over the year".

On his menu, the least expensive glass is offered at 4 euros, against 40 for the most expensive, “a gewurztraminer selection of Grains Nobles”.

“I miss it very often because it is in high demand,” laughs the native of Colmar, who offers a majority of Alsatian wines.

But not only, “customers also really like the wines of the Rhône, Languedoc or Burgundy.

Convinced by his concept, "wine by the glass is the future because people drink less and better", the almost thirty-year-old is now looking to settle "in Strasbourg".

Even far from his native region.

“But if I go to Avignon, for example, I will favor local wines.

I want to regionalize the map as much as possible, ”he already foresees.

So, it may be possible to go beyond the "N°5 Wine Bar", a benchmark that offers almost the same services in Toulouse.
