Although it is now considered a luxury product, lobster has not always been so popular and expensive.

Quite the contrary.

For centuries, it was a cheap, even free dish, consumed by the poorest.

Appreciated by the Romans during Antiquity, the lobster aroused little interest in the Middle Ages, except for being nutritious.

During the Renaissance, the rich deigned to consume it and it regained its image.

In the 17th century, in the United States, colonists discovered the coasts of New England, where lobsters - nicknamed cockroaches of the sea - abounded.

They serve as fertilizer or bait to catch other fish.

They are given to servants and prisoners.

Canned as early as the 19th century, lobster sold for less than beans.

It is in fact the development of the railroad in the country that will change its status in the United States: on board, it is served to a population that will appreciate it.

Overfishing at the beginning of the 1900s will rarefy the crustacean which will gradually become a luxury product.

Lobster season is not during the holidays, but in June and July!

In 1880, the famous Auguste Escoffier created the recipe for Thermidor lobster.

The recipe for grilled lobster with vanilla butter

Ingredients :

  • 50g clarified butter

  • 1 vanilla pod

  • 2 lobsters of 1 kg

  • Salt pepper

  • Melt the butter and add the vanilla seeds

  • Leave to infuse at room temperature

  • Split the lobsters in half

  • Pour half the butter over the flesh and cook for 3 minutes under the grill

  • Add the other half of the butter and cook for another minute

  • To serve
